LENTIL SOUP... BETTER KNOWN AS DAHL
INGREDIENTS:
1. HALF A CUP OF ORANGE LENTILS
2. ONE MEDIUM-SIZED YELLOW ONION - CUT
3. ONE SMALL EGGPLANT - CUT
4. ONE TEASPOON OF MUSTARD SEEDS
5. ONE TEASPOON OF CUMIN SEEDS
6. A HANDFUL OF CILANTRO - CUT
7. HALF A TEASPOON OF TUMERIC
8. ONE TEASPOON OF ADOBO SALT. ADD TO TASTE.
9. 2-3 DRIED RED PEPPERS
LET'S GET GOING!!
Place the Orange lentils, the onion and the eggplant in a round deep cooking vessel. Fill half way with water and boil. While this is boiling, take another smaller pan and heat 4 tablespoons of oil.
Next, add the mustard seeds, cumin, tumeric and salt. Fry evenly until the cumin seeds turn brown.
Add this mix into the boiling lentils and stir.
Place a cover over the boiling lentils for approximately 10-15 minutes.
Wait until the Lentils are soft and cooked well. After placing in a serving bowl, sprinkle the cut cilantro, and the a couple red peppers for those who are a little spicer.
A QUICK HEALTHY PROTEIN MEAL! GREAT AS A SOUP FOR DINNER WHEN YOU DON'T HAVE MUCH TIME TO COOK.
