Lamb MeatBalls with a Little Bit of Magic!

Lessons from a Fairy Princess


This is actually a recipe stolen from one of the most special people in the world .. my big Mama!! Actually, she's not very big at all. She's a cute little petite fairy princess, about 5'4" and exquisitely gorgeous.

She has the hands of a magician and the soul of an angel.
Watching her dart around the kitchen like a little sprite... opening this cupboard and that. Throwing in all sorts of things into her concoctions..
I could never follow her in the kitchen.. I would just sit and watch her float around the kitchen in complete awe. Her long dark hair dancing with her every move. I never actually paid attention to her cooking.
She was like magic.. Beautiful arrays of colors and aromas would just appear on the dinner table in 15 minutes.

So this time, I decided that I would actually try and watch what she was doing and what she was adding to her mesmerizing dinners.
I watched really closely, but I did not come even close to Mama's Recipe!

Never-the-less, my own magical concoction has its unique charm, and I dare to say, I enjoyed every bite! Maybe I can be a fairy princess too... just like my Mama.

INGREDIENTS:
1. Ground Lamb
2. Onion x 1
3. Tomatoes x 3
4. Lime x 1
5. Lemon x 1
6. Parsley
7. Cilantro
8. Salt
9. Pepper
10. Extra Virgin Olive Oil



PREPARATION:
1. Cut the onion, tomato, cilantro, & parsley into very small pieces, almost the size you see in a salsa bowl. Mix it all together in a bowl. Add salt, and pepper to taste and squeeze the entire lime into the mixture.
2. Next, take a handful of the mixture you just made above and mix it in with the ground lamb.















When you are satisfied, make round balls, just small enough to fit into the palm of your hand and set them aside on a plate.

3. Pour 2 tablespoons of olive oil into a large flat pan and keep it on high heat. Wait about 3 minutes, then place the Ground Lamb balls gently into the pan. Make sure you fry them sufficiently so that all sides turn brown and slightly black at the edges.

4. In a separate pan, spray the pan with Extra virgin oil spray and throw in the remainder of the mixture in #1. Caramelize the onions and the tomatoes so that the mixture turns a nice shade of medium to dark brown.

5. When the lamb Meatballs are sufficiently cooked and brown, pour the contents of pan #2 on the lamb Meatballs.

That's all it takes! You'll have a nice side of Lamb Meatballs which you can serve on a bed of Spinach, Rice, Pasta, or whatever your heart craves for that day!

  2. In a grocery store..... no seriously, some ShopRites carry them.. otherwise you'll have to trudge up to a Halal Meat Store.
